Carrot Cake Overnight Oats

I like to go to bed with a plan in place to wake up and conquer the day!

It feels good when I know I have a quick and delicious breakfast prepared. This carrot cake overnight oats is my current favorite. Creamy, thick and rich….It nourishes my body and goes down easily before the start of a busy day! It also makes a great after run snack. I am doing GetUFit Irene’s 25 day nutrition challenge. (still time to join) This includes doing 4 small meals a day so I never get overly hungry. I also enjoy this mid-day after a run. I will finish up a run, take a shower, change clothes, and get started on the next task. Hunger can sneak up on me. If I need to cook a meal, then I end up eating too much. Having this satisfying option ready in the fridge helps me make a better choice.

Recipe:

  • 1.5 cup rolled oats

  • 1 cup plain unsweetened Greek yogurt ( I use a higher fat yogurt)

  • 1.5 cup almond milk

  • 3 tablespoon chia seeds

  • 2 teaspoons Cinnamon

  • 3 tablespoon of Monk Sugar or Maple syrup

  • 2 tsp of real vanilla

  • 1/2 cup slivered almonds

  • 1 large carrot shredded

  • 1/2 cup yellow raisins

Mix this all together in a bowl. Then store in a Mason jar. Let sit overnight. Stays good for 3 days in fridge.
