Chocolate Fudge refrigerator brownie
Let’s talk sugar cravings. I have completely eliminated sugar from my diet and I can not see any reason to ever add it back in. Sugar is often described as a drug. It is easy to see why, it is addictive and it has no positive nutritional value. For me, rationalizing moderation on sugar does not make sense. It will just wake up my addiction to sugar and make me crave having more. I found that once I eliminated it completely from my diet, I have not missed it at all.
That does not mean I do not enjoy sweet treats. I have had success in weight loss and overall health by finding healthy alternatives. I worked with a Registered Dietitian to plan healthy meals. I spent a year learning about nutrition, was given healthy guidelines to follow, and worked these steps into my every day life. These Chocolate Fudge Refrigerator Brownies follow all the guidelines I used for successful weight loss.
I am now running better, sleeping better, more relaxed, eat well and I never feel deprived. This is the result of the work I have put into making the best food choices. My Registered Dietitian guided me in how to fill my plate. I learned what I like that fills me up and gives me good energy.
I made Nutrition my BHAG (Big hairy audacious goal). I woke up every day excited to learn new ways to feed my body helpful nutrients. I made adjustments in my schedule so I would always have healthy food available. I have a busy life. My food is simple, quick, and delicious. Chocolate Fudge Refrigerator Brownies
18 Medjool dates
1/3 cup cocoa powder
2/3 cup raw monk sugar
1 tsp pure vanilla extract
1 cup toasted walnuts
1/8 tsp sea salt
extra cocoa powder for rolling dough
****optional grated orange peel, this is something I like. I love the flavor of orange peel. If you do not then leave this out. I used the gratings from 2 oranges
Directions:
Take the seeds out of 18 Medjool dates and put into a Vitamix (or blender). Add cocoa powder, raw monk sugar, vanilla extract, and sea salt. Blend until smooth
Mix the orange peel and chopped walnuts into the brownie dough.
Put a piece of wax paper down and sprinkle with cocoa powder. This is to keep the dough from sticking. Drop the dough mixture onto the cocoa powder and shape into a log.
Transfer the log into clear film. You can use the wax paper but I have found that sometimes the dough sticks to it. Put your brownie log into the refrigerator for at least 3 hours to get cold.
Slice into bars and keep in an airtight container in refrigerator. I like to slice a few slices every couple of days then keep the rest of the log tightly wrapped. This helps keep the dough extra creamy and fudgy.
